Chocolate Chunk Birthday Cake – Incredibly Morish

I created this chocolate chunk birthday cake a few days ago and it was a hit! I wanted to elevate the traditional chocolate cake without making it too complicated, and thought, why not add chunks of chocolate! This cake is light but still decadent. Perfect to give as a birthday cake or any time you fancy a slice!

This cake looks wonderful as it is. The chunks on the top give it such a gooey chocolatey look! I decided to decorate this cake as it was part of a gift. I used the wonderful chocolate frosting from Betty Crocker, you can find it here using this affiliated link (I could earn a commission). Betty Crocker is also sold in most supermarkets when you are picking up the rest of your ingredients! I love using this frosting when I am a bit short on time, it’s smooth and delicious. There is enough here to cover the whole cake and have a few “test spoonfuls”. I also used some hundreds and thousands! I wanted to add a bit of colour to the cake and it’s for a birthday! Nothing says happy birthday than lots of hundreds and thousands!

I love making birthday cakes for people! I think it’s a wonderful way to show them some love. Spending some time in the kitchen to create something delicious that can be shared amongst friends! I made this carrot cake a few weeks ago that could work if you have someone who either doesn’t like chocolate or would like something a little less sweet! For this chocolate chunk birthday cake, I used these chunks from the co-op. Any will work (make sure they are vegan!) But I like using these as they aren’t as dark as most vegan chocolate so they don’t add a bitter note to the cake. Let me know what you think of this recipe in the comments below!

Chocolate chunk birthday cake

Chocolate chunk birthday cake, suitable for any occasion where cake is required!

Ingredients
  

  • 400 g Self Raising Flour
  • 1 1/4 tsp Bicarbonate of Soda
  • 1 tsp Baking Powder
  • 20 g Cocoa Powder I used hot chocolate powder
  • 250 g Caster Sugar
  • 110 ml Neutral oil I used sunflower
  • 400 ml Oat Milk or other plant based milk
  • 4 tbsp Golden Syrup
  • 2 tsp Vanilla Extract
  • 20 g Vegan Chocolate Chunks

Instructions
 

  • Preheat the oven to 180 degrees and prepare your cake tin by greasing the sides and lining the bottom.
  • Mix the flour, baking powder, bicarbonate of soda, cocoa powder and sugar together in a bowl
  • In a separate jug mix the milk, oil, golden syrup and vanilla extract
  • Pour the wet ingredients into the dry and whisk together until there are no dry bits
  • Add in 15g of the chocolate chunks and mix in
  • Pour the mixture into the cake tin
  • Lightly drop the remaining chocolate chunks on to the top of the cake
  • Put the cake into the oven and bake for 40 to 50 minutes. Check the cake after 35 minutes with a skewer. Continue cooking until the skewer comes out clean
  • Once the cake has baked leave it to cool for 15 minutes before taking it out of the tin
  • Leave the cake to cool completely and enjoy!
