Heat 1 tsp of olive oil in a large non-stick frying pan
Over a medium heat, fry the sweetcorn for 2 to 3 minutes until slightly browned
Put the sweetcorn to one side
Add all of the dry batter ingredients into a mixing bowl
Add in the cider vinegar and milk and whisk until smooth
Add salt and pepper to taste
Add in the sweetcorn and stir well to incorporate the sweetcorn into the batter
Heat 2 tsp in the same frying pan
A spoonful at a time, add in the batter to the oil
Smooth the batter out so that it isn't too thick
Cook for about 3 to 5 minutes, flipping so as not to burn
Dish up straight away or pop in the oven to stay warm
