Sweetcorn Fritters

Ingredients
  

  • 200 g Frozen or Tinned Sweetcorn
  • 1 tsp Olive Oil

Batter

  • 240 g Plain Flour
  • 1 tsp Garlic Powder
  • 2 tsp Mixed Herbs
  • 1 tsp Baking Powder
  • 3 tbsp Cider Vinegar
  • 200 ml Oat Milk Can be substituted for milk of choice
  • 2 tsp Olive Oil

Instructions
 

  • Heat 1 tsp of olive oil in a large non-stick frying pan
  • Over a medium heat, fry the sweetcorn for 2 to 3 minutes until slightly browned
  • Put the sweetcorn to one side
  • Add all of the dry batter ingredients into a mixing bowl
  • Add in the cider vinegar and milk and whisk until smooth
  • Add salt and pepper to taste
  • Add in the sweetcorn and stir well to incorporate the sweetcorn into the batter
  • Heat 2 tsp in the same frying pan
  • A spoonful at a time, add in the batter to the oil
  • Smooth the batter out so that it isn't too thick

  • Cook for about 3 to 5 minutes, flipping so as not to burn
  • Dish up straight away or pop in the oven to stay warm
